Air Fryer Roasted Asparagus and Tomatoes

Tender crisp garlic roasted asparagus on a bed of sweet and tangy balsamic roasted tomatoes. You and your guests will never believe this healthy side dish came out of an air fryer!

This is a super simple recipe so I’ll spare you our typical visual recipe walkthrough. For air frying, I used the same Instant Pot Duo Crisp I used for my air fryer asparagus and potatoes recipe. Every air fryer is different so keep an eye on your veggies during your first attempt and adjust the cook time as necessary.

Air Fryer Roasted Asparagus and Tomatoes

Garlic roasted asparagus with balsamic burst tomatoes.

Ingredients

For the Tomatoes

  • 8 oz Cherry or Grape Tomatoes
  • 1/2 Tbsp (8g) Olive Oil
  • 1/2 Tbsp (8g) Balsamic Vinegar
  • 1 tsp Garlic Powder
  • Pinch of Salt and Pepper

For the Asparagus

  • 8 oz Asparagus, trimmed to fit air fryer basket
  • 1 Tbsp (16g) Olive Oil
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Red Pepper Flakes (optional)

Instructions

  1. Toss the tomatoes in the olive oil and balsamic vinegar before adding the garlic powder, salt, and pepper.
  2. Air fry at 300ºF for 8-10 minutes. The tomatoes should have some wrinkling and light blistering.
  3. While the tomatoes are in the air fryer, toss the asparagus in a tablespoon of olive oil before seasoning. Set aside.
  4. Once the tomatoes have cooked for 8-10 minutes, add the asparagus spears directly on top of the tomatoes.
  5. Air fry at 400ºF for 5-8 minutes until the asparagus is a bright green and tender crisp. Be careful not to over cook. Serve with freshly grated parmesan, if desired.
