Air Fryer Roasted Asparagus and Tomatoes

Ingredients

For the Tomatoes

  • 8 oz Cherry or Grape Tomatoes
  • ½ Tablespoon (8g) Olive Oil
  • ½ Tablespoon (8g) Balsamic Vinegar
  • 1 teaspoon Garlic Powder
  • Pinch of Salt and Pepper

For the Asparagus

  • 8 oz Asparagus trimmed to fit air fryer basket
  • 1 Tablespoon (16g) Olive Oil
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Red Pepper Flakes optional

Instructions

  • Toss the tomatoes in the olive oil and balsamic vinegar before adding the garlic powder, salt, and pepper.
  • Air fry at 300ºF for 8-10 minutes. The tomatoes should have some wrinkling and light blistering.
  • While the tomatoes are in the air fryer, toss the asparagus in a tablespoon of olive oil before seasoning. Set aside.
  • Once the tomatoes have cooked for 8-10 minutes, add the asparagus spears directly on top of the tomatoes.
  • Air fry at 400ºF for 5-8 minutes until the asparagus is a bright green and tender crisp. Be careful not to over cook. Serve with freshly grated parmesan, if desired.
