KIND Bar Brownies

My husband and I have recently developed an addiction to KIND Bars. They’re the perfect sweet and salty snack to eat throughout the day. I just knew they would go great in a dessert of some kind. And so, the KIND Bar Brownies were born.

I was heavily inspired by Liam Charles’ Mega-Choccy Stack recipe. It’s a ridiculously indulgent dessert made up of rich brownies, silky smooth chocolate pudding, and homemade whipped cream. While it’s one of my favorite desserts to make and eat, I wanted to put my own spin on it.

The result is rich, dark chocolate brownies filled with roughly chopped Caramel Almond & Sea Salt KIND Bars, topped with homemade whipped cream, more KIND Bars, and a cookie butter drizzle. I mean, does it get better than that? I think not!

KIND Bar Brownies Recipe Walkthrough

While this dessert looks and tastes like something you would get at a fancy restaurant, it’s actually a very simple two part recipe. The hardest part will be having the willpower to wait until everything is cooled before assembling and eating!

Part one is making the brownies. All you need is a mixing bowl and a whisk for this step. Part two is making homemade whipped cream. All you need for that are three ingredients and a something to whisk them in, ideally a stand mixer, but a hand held mixer will work just fine too.

Making the Brownies

Brownies are pretty easy to make. And while these aren’t quite as simple as a box recipe for brownies, it is pretty darn close. However, it it worth the extra effort to make your brownies from scratch.

All you need is a mixing bowl, whisk, and a 9 x 13 glass pan to get started. You’ll whisk a few ingredients together, pour the batter into your baking dish, and then you’ll taste some of the best brownies you’ve ever eaten.

Step 1: Add olive oil, vanilla, sugar, and brown sugar together in a large mixing bowl.

The mixture will look a little odd and oily at this stage, but will come together more as additional ingredients are added to the mix.

Step 2: Add the lightly beaten eggs.

Be sure to lightly beat the eggs before adding to the mix. This will save you some effort when mixing into the existing batter and ensure that your brownies have the correct consistency at the end.

Step 3: Add cocoa powder, instant coffee powder, and flour.

Gently whisk the dry ingredients into the wet ingredients. You’ll find that cocoa powder can get quite messy when being stirred into anything, so whisking it in gently will help keep all of your ingredients in the bowl.

Step 4: Fold in the roughly chopped KIND Bar pieces.

The batter will be quite thick and sticky, so make sure to take the time to gently fold the chopped KIND Bar pieces evenly throughout the batter. This will ensure that there is a good distribution of KIND Bar pieces in each bite of the brownies when they’re all done.

Step 5: Pour the batter into the baking dish and bake.

Bake the brownies at 350ºF for 20 minutes, or until a toothpick inserted comes out clean. Once you remove the brownies from the oven, let them cool completely before adding the toppings! Otherwise your homemade whipped cream will melt.

Making the Whipped Cream

While the brownies are cooling, start making the whipped cream. Once you start making whipped cream at home, you will never go back to the store bought stuff! All you need are three ingredients, a stand mixer, and 3-5 minutes.

Step 1: Add heavy cream, vanilla, and powdered sugar into the mixing bowl of a stand mixer.

Whisk on high speed until stiff peaks begin to form, about 3-5 minutes. That’s it! Done. You now know how to make homemade whipped cream. You’re welcome 🙂

Step 2: Gently spread the whipped cream on top of the cooled brownies.

Complete the dessert with a sprinkle of chopped KIND Bar pieces and cookie butter drizzle! You can add more or less, depending on your preference.

Once assembled, enjoy! Be sure to store your dessert in the fridge.

Ingredients

For the Brownies

  • 1/2 C (120ml) Olive OIl
  • 1 tsp Vanilla
  • 3/4 C (144g) Sugar
  • 1/2 C (96g) Light Brown Sugar
  • 3 Eggs, lightly beaten
  • 1/2 C (40g) Cocoa Powder, I prefer Dutch-processed
  • 1 tsp Instant Coffee Powder
  • 2/3 C (79g) All-Purpose Flour
  • 4 Mini Caramel Almond & Sea Salt KIND Bars, roughly chopped

For the Whipped Topping

  • 1 C (240 ml) Heavy Cream, cold
  • 1 tsp Vanilla
  • 1/3 C (47g) Powdered Sugar
  • 1 Tbsp (15g) Cookie Butter, melted for a drizzle
  • 2 Mini Caramel Almond & Sea Salt KIND Bars, roughly chopped

Instructions

Making the Brownies

  1. Preheat the oven to 350ºF.
  2. In a large mixing bowl, whisk together the olive oil, vanilla, sugar and light brown sugar.
  3. Add the lightly beaten eggs and whisk in until completely combined.
  4. Add the cocoa powder, instant coffee powder, and flour. Mix until combined.
  5. Gently fold in the chopped KIND Bars until evenly dispersed throughout the batter.
  6. Pour the batter into a 9 x 13 glass pan. Bake for 20 minutes or until a toothpick inserted comes out clean.
  7. Remove from the oven and allow to cool completely before adding the whipped topping.

Making the Whipped Topping

  1. Using the whisk attachment on a stand mixer, whisk heavy cream, vanilla, and powdered sugar together on high speed until stiff peaks being to form, about 3-5 minutes
  2. Gently spread the whipped cream on top of the cooled brownies. Sprinkle the chopped KIND Bars over the top of the whipped cream before drizzling with cookie butter.
  3. Enjoy!

Notes

The amount of cookie butter and chopped KIND Bars on top can be altered to fit personal preference.
