Ingredients

  • 4 Frozen Hash Brown Patties
  • 4 slices Bacon
  • 4 oz Grape Tomatoes
  • 1 Jalapeño Pepper seeded and diced
  • 4 large Eggs fried in 1 Tablespoon of Olive Oil
  • 2 Wholly Guacamole Cups or freshly smashed avocado

Instructions

  • If you have an air fryer with two baskets or racks, add the bacon to the top basket and the hash browns, grape tomatoes, and pepper to the bottom basket. Air fry for 5-6 minutes at 350ºF until crispy. Transfer to a paper towel and air fry the hash brown and veggies an additional 5-6 minutes at 400ºF until the hash browns are golden brown.
  • For a single-basket air fryer, cook the bacon on its own for 5-6 minutes at 350ºF before removing and cooking the hash browns and veggies on their own for 8-10 minutes at 400ºF.
  • While the hash browns and veggies are cooking, pan fry the eggs to over-medium or to your liking.
  • Once the hash browns are golden brown, top each with half a guacamole cup, 1 slice of bacon, an egg, 1/4th of the tomatoes and pepper, and any additional toppings like queso fresco or grated parmesan, salsa macha, or hot sauce.

Notes

I tested cook times for a double basket air fryer in the 10-quart Instant Pot Vortex Pro, and the single basket air fryer times in a 6.5-quart Ninja Foodi.
