Korean BBQ Flanken Short Ribs (Kalbi) with Grilled Vegetables

LA-style beef short ribs in a Kalbi marinade grilled with sesame soy glazed zucchini and mushrooms on a Traeger grill.

Ingredients

  • 2 ½ pounds Flanken Beef Short Ribs also called L.A. style ribs*

For the Marinade

  • 4 cloves Garlic
  • 1 " piece Ginger peeled
  • 2 Scallions
  • 1 Kiwifruit or ½ an Asian Pear
  • ½ cup Soy Sauce
  • ¼ cup Mirin
  • ¼ cup Dark Brown Sugar
  • 2 Tablespoons Toasted Sesame Oil
  • 1 teaspoon Black Pepper
  • 1 Tablespoon Toasted Sesame Seeds

For the Grilled Vegetables

  • 2 medium Zucchini sliced into ¼" planks
  • 6 oz Sliced Mushrooms
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to taste

For the Vegetable Glaze

  • 3 Tablespoons Soy Sauce
  • 1 Tablespoon Honey
  • 1 Tablespoon Toasted Sesame Seeds
  • 1 Tablespoon Toasted Black Sesame Seeds

Instructions

  • Blend all the marinade ingredients together in a food processor before pouring over the short ribs. Seal in an airtight bag or container and marinate overnight or up to 24 hours. (The enzymes in the fruit can make the meat mushy if marinated too long.)
  • When ready to grill, preheat your Traeger to 500ºF with the lid closed for 15 minutes. If you're grilling mushrooms alongside the short ribs, add a cast iron or mesh grill plate to preheat on the grill as well.
  • Remove the beef from the marinade and pat dry with paper towels. Coat the vegetables with olive oil and season with salt and pepper.
  • Add the beef and vegetables to the grill and cook for 5-6 minutes before flipping the beef. It should be caramelized and have nice browning in spots. If it's not, give it another minute or two. (Traeger tip: Adding the ribs to the front and back perimeter hot spots creates the best browning.)
  • Brush the vegetables with the glaze before flipping the zucchini and stirring the mushrooms on the grill plate.
  • Cook the short ribs and vegetables an additional 3-4 minutes until the beef reaches an internal temperature of 165ºF. (Note: Your ribs may need more/less time depending on their thickness and the temperature of your grill.)
  • Transfer the short ribs to a plate and tent with foil to rest while plating the vegetables with rice, kimchi, and any other pairings.

*This marinade should work for anywhere between 2-3 pounds of short ribs. If you can't find flanken short ribs, you can slice whole short ribs to create long strips for Kalbi. See the post above for more tips.
I used a Traeger Pro 575 with Signature pellets for grilling. Being the smaller model, I grilled the vegetables on their own prior to grilling the short ribs. I kept them in the oven on its lowest setting to keep warm.
If you don't have a grill, you can cook these short ribs indoors on a grill pan or large skillet. Cook both sides over medium-high heat until the beef reaches 165ºF internally.
