Make the marinade. Blend orange juice, lime juice, garlic cloves, chipotle peppers in Adobo, cilantro, olive oil, kosher salt, paprika, and ground cumin together in a food processor.
Marinate the chicken. Place the chicken in an airtight container with the marinade for at least 2 hours or up to overnight.
Grill the chicken. Add the marinated chicken breast to the preheated, grill on the grates, and grill with the lid closed for about 25 minutes, flipping in the final 5-10 minutes.
Rest the chicken. Let the grilled chicken rest for 5 minutes before serving.
We stuff ours with refried beans, diced chicken, cheese, and smother with queso.
